Good evening, 
how come if I have multiple outputs/projectors I always have one source in the middle and can't separate them?

I am not sure what you mean but if you have a large desktop like a mosaic with nvidia multiple outputs are recognized as a single surface. you can delete the surface and split the output into multiple surfaces by right clicking on the output in the project explorer
